This wine, as with our previous vintages, was 100% barrel fermented in a mix of new and one year old French oak barrels. To preserve the natural acidity in the wine we hold the malolactic fermentation to under 30%. The 2004 Vineyard 8 Chardonnay exhibits complex aromas and flavors of lemon zest, pippen apple, toasted almond, yeast and exotic spices. The wine is beautifully balanced and has a long, lingering finish. Our most Burgundian Chardonnay thus far. 500 cases produced. | |||||
