Port

Vintage Port is produced from a single vintage and bottled after two years in wood. Grapes for vintage Port are still crushed by foot in stone fermenting tanks called lagares. Fermentation is stopped when approximately half of the natural grape sugar has fermented. Neutral grape spirits are added to the partially fermented wine which stops further fermentation. The wine is then stored in large oak vats until the following spring. The wine is then transported by boat down the Douro river to Oporto where the wine is transferred into smaller barrels for additional aging until release. After release in the market place vintage Ports can continue to age for decades or more. Ideally, great vintage Port should have a minimum age of a decade or more it before it is drunk.

Nicolau Kopke first came to Portugal in 1638, founding what is now the oldest Port house still in existence. Their aged tawny and colheita wines can be excellent. Colheita means 'harvest' and (by extension) 'vintage' in Portuguese, yet colheita wines are very different from what we understand by the word 'vintage' when it appears on a bottle of Port. Colheitas are best understood as tawny ports from a single year, bottled with the date of harvest on the label. Colheitas wines are aged in wood for at least seven years (most are for considerably longer) until they take on all the nuances of an old tawny wine.

The 1977 Fonseca is slightly lighter in color and shows some ambering on the rim of the glass. Lilies, cherries, coffee, mocha, and green flower notes can be discerned in its penetrating aromatics. Softly textured, this wine's mouth-feel is exciting yet not as enthralling as the 1983's. Its warm personality is interspersed with toasted walnuts, cassis, and plummy blackberries. Its super-long, sweet finish is harmonious and flavorful.

Graham is another great port house, producing one of the deepest-colored and sweetest styles of vintage port. Along with Taylor and Fonseca, Graham has probably been the most consistent producer of great port in the post- World War II era. Their tawnys are quite good rather than exceptional, but their vintage ports are truly sublime and sumptuous.

This house must certainly be the Latour of Portugal. Their ports are remarkably backward yet still impressive when young. Of all the vintage ports, those of Taylor need the longest time to mature and even when fully mature seem to have an inner strength and firmness that keep them going for decades. Their tawnys are also among the very best, though somewhat expensive. The 1977 has consistently been at the top of my list of vintage ports in this great vintage, although the Dow, Graham, and Fonseca are equally splendid. It is a mammoth, opaque, statuesque vintage port of remarkable depth and power, but is should not be touched before 2000.

Good ruby color still. The nose is fresh, with lots of crushed berry and plum, with a hint of piecrust. Full-bodied, with firm tannins and a caressing texture. Fonseca is one of the great port lodges, producing the most exotic and most complex port. If Fonseca lacks the sheer weight and power of a Taylor, Dow or Warre, or the opulent sweetness and intensity of a Graham, it excels in its magnificently complex, intense bouquet of plummy, cedary, spicy fruit and long, broad, expansive flavors. With its lush, seductive character, one might call it the Pomerol of Vintage ports. When it is young, it often loses out in blind tastings to the heavier, weightier, more tannic wines, but I always find myself upgrading my opinion of Fonseca after it has had 7-10 years of age. The 1985 looks to be one of the top successes of the vintage, yet I believe both the superb 1983 and the otherworldly 1977 are far superior. Dense ruby/purple with the Oriental spice-box aroma, the 1985 is an expansive, sweet, broadly flavored wine with outstanding depth, concentration, and balance. It finishes with a solid lashing of alcohol and tannin.

Graham is the undisputed star and kingpin of the 1985 vintage ports. Yes, it is made in a sweeter style than the other ports, but it is a fabulous wine because of a dazzling level of black-cherry fruit, an enormous structure, and staggering depth, dimension, and length. It is forward, as are all 1985s, and I would speculate that this port will be approaching maturity by 1992-93 and will keep 15-20 years thereafter.

This colossal vintage port reveals a nearly opaque black/purple color, and an explosive nose of jammy black fruits, licorice, chocolate, and spices. Extremely full-bodied and unctuously-textured, this multi-layered, enormously-endowed port reveals a finsih that lasts for over a minute. It is a magnificent port that will age well for 30-40 years.

Wine Spectator Co-Wine of the Year. How do you define perfection, especially in an early stage of a wine's evolution? Hold on to your hat. This is the best Fonseca since 1977, and it's probably even better than that classic vintage--more like the breathtaking 1948. Mind-blowing, with masses of color, aroma and fruit flavor. Smells like fermenting berries, boasting loads of crushed grape, violet and berry character. Big, full-bodied and very sweet, with tons of tannins and a sweet finish. Tannic and huge, it's a long-term, great Port.

Extremely fragrant and pungent, with a flashy display of jammy cassis, pepper, licorice and truffles, this port is an attention-grabber. Wine Spectator Co-Wine of the Year. There is a little doubt that the 94' Taylor and Fonseca will be as memorable as the 1977 Fonseca, the 1963 Quinta do Noval Nacional and the 1948 Taylor Fladgate. In a word, superb. It's full-bodied, moderately sweet and incredibly tannic, but there's amazing finesse and refinement to the texture, not to mention fabulous, concentrated aromas of raspberries, violets and other flowers. Perhaps the greatest Taylor ever, it's better than either the '92 or the '70, though it's very like the '70 in structure.

In tasting of young vintage ports, Taylor is always the most backward. Yet potentially, it has the capability to be the most majestic. Somewhat of a lightweight for Fonseca, but undeniably charming, this dark ruby/purple-colored wine offers a floral, exotic, flamboyant bouquet, a sweet, fleshy style, but not a great deal of weight or massiveness. Heady alcohol, sweet tannin, and a velvety texture make for a gorgeous finish. While I would have preferred to have seen more weight, structure, and intensity, this is an outstanding, albeit lighter than normal Fonseca. Anticipated maturity: now-2020.

The wine is medium bodied, rather elegant in mouth-feel, round and luscious. The blackfruit and plum flavors are ripe but not overtly sweet. There is none of the raisiny character that frequently mars similar port-style wines from California. The finish is long and lingering. This is a wine of subtlety not raw power. Already delicious this port-style wine will continue to improve with additional cellaring.

The 1997 Nacional is a legend from this pre-phylloxera vineyard. The color is a saturated black/purple. Extremely full-bodied, but less massive and seamless, this spectacular Nacional will reach its plateau of maturity quickly, where it will remain for 2-3 decades.

Saturated deep ruby. Great minerally aromas of black plum, black cherry, roasted meat and deep spices. Very sweet and very dense, with youthfully backward black fruit, mineral and bitter chocolate flavors. Finishes with wonderfully ripe, sweet tannins and superb persistence and grip. Has the verve most '97s lack. This may ultimately challenge the great 94.

Spectacularly concentrated and enormously endowed, with sweetness allied to ripe tannin, decent acidity, and layer upon layer of fruit and extract, this is the leading candidate for the port of the vintage.
