It is extremely full-bodied and massive in the mouth, with sweet tannin, a layered, plushly-textured mid-palate, and a firm, exceptionally long, pure finish. This classic mountain-styled Cabernet Sauvignon can be drunk now, but it will be even better with 5-7 years of cellaring. It will keep for 2 decades. Another luxury operation in the Kendall-Jackson portfolio, this winery appears to be doing everything right. The wines are 100% Cabernet Sauvignons made in limited quantities of 250-350 cases. The wines are aged in 100% French oak casks (45%-75% new), malolactic fermentation is done in barrel, and the wines are bottled with no filtration. All of these wines revealed outstanding aromatics, natural, chewy, expansive textures, and exceptionally ripe, concentrated fruit. Moreover, they are candidates for 20 or more years of cellaring. In short, I am very enthusiastic about this project. | |||||

| winemaker: Heidi Peterson Barrett. 500 cases. This wine has a beautiful deep ruby color. The nose gives you a combination of sweet ripe Cabernet fruit and some racy spiciness. The fruit from this vineyard consistently produces wines with a black cherry and currant character and this vintage shows this as well. In the mouth, the wine is lively but very soft and elegant. The black cherry carries through on the palate with almost no sign of tannin and a rather lengthy finish. This is an easy-to-drink wine with a lot of finesse and can be enjoyed without much bottle age. | |||||

A dark saturated blue/purple color is followed by tight aromatics offering up scents of blueberries, minerals, cassis, and subtle toast. It is medium to full-bodied and elegant, with sweet tannin as well as a tightly-knit, convincing finish. This wine appears to have a promising future. Although still young and unevolved, it is impressively endowed and pure. Anticipated maturity: 2005-2020. | |||||

Nevertheless, there is no sense of overweight or flabbiness to this brilliant, Bordeaux-styled blend..The 1997's saturated black/purple color is followed by a gorgeously perfumed nose of licorice, cassis, sweet foresty scents, and toasty new oak. On the palate, the wine offers licorice, black currant jam, and notes of a woodfired oven. It exhibits a dense ruby/purple color in additioin to aromas of melted fudge, cocoa, tobacco, and black currant fruit. In the mouth, the wine is medium to full-bodied, with firm tannin, and a compressed, moderately long finish. Not surprisingly, it does not exhibit either the flavor dimension or length of the 1997 or 1996. 1998 was a more difficult vintage, but Les Pavots has turned out well, revealing more of a Bordeaux-like weight profile than the more enormously-endowed, concentrated 1997.
